Sourdough adventures

Happy December everyone!  The month we've all been waiting for.  I'm so excited.  I think I'll be able to actually enjoy it this year.  I've bought all the presents, made a bucket list, and have plans laid out.

I really want to enjoy the benefits of sourdough.  I love bread and have been so determined to get a successful batch of starter.  I have so many gut problems that I NEED this in my life.  I can get it to double.  I can get it bubbly.  I can get it to float.  What I can't get is for it to rise as a loaf.  

I can't get the smell right either.

This was a loaf that I gave a shot after it passed all the "tests."
It was alright.

This loaf was not wanting to rise.  I stuck it in a small room with a portable heater on trying to get it to rise.


8 hours later...nope!


Here's another loaf that I finally got to rise, but instead of rising in the banneton, I forgot that part and it rose in the bowl.  When I went to bake it I realized my mistake and although it was a pretty good loaf, the taste was off.


So I keep trying to get the taste/smell on point.  It wasn't a sour smell.  More of an acetone smell.  


I can get it more than double, but the smell was still off.  


It's just too frustrating and wasting so much flour.  I buy organic flour so it's not cheap to keep wasting.

 My adventures with sourdough has come to an end.  Once again.  It's so frustrating that I couldn't get it to work.  I'm not sure if I'll give this another try.  I think I'll stick to going to the local country market to pick up my loaves there for awhile.

Have you had any luck starting a starter from scratch?
