Grilled Chicken Bites with Macaroni

Okay, this may be the worst picture ever taken, but the meal was so so good.  It is also the second helping my kid went back for.  I didn't think to take pictures of this meal because...


Have you ever made a meal and were certain your family was going to hate it because it's probably the most boring meal ever made?  That's how I felt about this one.  But, it's getting a permanent spot on my feed because it was declared the best meal ever made.  So, I thought I'd share this simple delicious meal.

For the chicken:

Dice up chicken into 1 inch chunks
3/4 tsp oregano
3/4 tsp parsley
3/4 tsp salt
1/2 tsp thyme
1/2 tsp cayenne pepper
1/2 tsp pepper
3 tbsp high heat olive oil

Mix it all together and let marinate chicken for at least 6 hours.  When I was ready to cook it I heated up the grill with the stove top griddle pan.  I spread more high heat olive oil on the griddle and let the grill get to 400.  Cook until it's done.

I used this recipe for the macaroni.

Everyone raved about the chicken.  Xander said it was the best chicken ever with so much flavor and didn't even need sauce to dip it in.  Sterling brought the pan to the table and finished off the chicken.  It was that good!  The boys loved the macaroni.  I made half the pan of macaroni with bread crumbs, which is what they ate.  Sterling and I had the plain side.  We thought it was okay, but next time I think I'll do the whole pan with bread crumbs.  Do you have a favorite homemade macaroni recipe?
